Tahini cookies – inspired by a recipe in Bon Appetit (work in progress) chocolate version: half cup butter half cup sugar half cup tahini 1 1/4 cup flour 1/3 cup cocoa (try one quarter) Beat butter and sugar together. Mix 1 cup flour and cocoa together, add alternating with tahini. Make sure your tahini is well mixed. Try to cram in that last quarter cup of flour. It will be extremely stiff. Roll into a log; chill thoroughly. Cut into quarter inch slices and bake at 350 for (I forgot to write it down but probably it was 10 minutes. Nine minutes?) One tray at a time on an upper rack.
